If you have ever uttered the words “I don’t bake” or “I don’t do yeast,” this recipe for delicious homemade English muffins will change your mind and make you a rockstar. Do you shy away from baking because of calories and fat? Prepare to be blown away by this HEALTHY no-brainer which comes together in a snap.

With just six ingredients and ZERO grams of fat per serving, these muffins could easily become a weekend tradition. Unlike the round variety at the supermarket, they are baked in a regular loaf pan, giving them a distinctive squared off look when sliced. But maybe the coolest part of creating the bread with your kids is that it bakes in just FOUR MINUTES in the microwave. Really! After it cools, the bread is ready for toasting and spreads. You could even sprinkle them with pizza toppings and serve them for lunch.

Easiest Rockstar English Muffins

2 cups, plus 1 tablespoon flour
2 ¼ teaspoons active dry yeast (or 1 packet)
1 tablespoon sugar
½ teaspoon salt
1 cup skim milk, lukewarm
¼ teaspoon baking soda

1. Combine the flour, yeast, sugar, and salt together in a large bowl. Add the milk and stir with a wooden spoon for about 20 seconds. The kids can do this and will enjoy watching the mixture become thick and stretchy. Cover the bowl with a damp dishtowel and let the dough rise in a warm spot until it doubles in size, about an hour. Ask the kids to make a fist and punch it down to release the air.

2. Dissolve the baking soda in one tablespoon of water, and stir this into the dough until it is incorporated. Your muscles may be required for this step.

3. Coat a regular sized GLASS loaf pan with non-stick spray, and use a spatula to transfer the dough into the loaf pan. Cover the pan with a damp dishtowel and let it rise in a warm spot for about 45 minutes. Be patient! To test whether it’s ready, poke two fingers into it, and if it springs back right away, it’s ready.

4. Place the pan uncovered in the microwave and cook 4 minutes or until the loaf has no moist looking spots on top. It’s fun to watch it transform! Cool the loaf in the pan for 10 minutes, then release it onto a rack and let it cool completely. Slice into 10-12 muffins, toast, and top as you desire!
